Is “like” always a filler though? Sometimes people use it for real meaning, like “what was that like?”. Context matters a lot. Same with “so”. Not every single one should automatically be treated the same.

Basically anything that doesn’t really add meaning but people say while thinking. Like um, uh, you know, kind of, sort of, I mean… those are the main ones. In full verbatim you have to write all of them exactly as the person said it. Clean verbatim removes most of them.
